Job Title: North Indian Chef (Rajasthani Cuisine Specialist)

Job Description

We are seeking a skilled and experienced North Indian Chef with expertise in Rajasthani cuisine to join our restaurant. As a Sous Chef, you will be responsible for preparing authentic Rajasthani dishes from our menu, including Lal Mans, Daal Bati Churma, Raj kachori, and other regional specialties. Your in-depth knowledge of Tandoori cooking techniques, North Indian cuisine, and Rajasthani spices will be essential for delivering high-quality, flavourful dishes that reflect the rich culinary traditions of Rajasthan.


1. Prepare Rajasthani dishes according to our restaurant’s standards and recipes, with a focus on Tandoori cooking techniques.
2. Expertly handle and operate the Tandoor oven, ensuring consistent and precise cooking temperatures for optimal results.
3. Create and maintain a clean and organized Tandoor station, including proper storage of ingredients, utensils, and equipment.
4. Monitor and control food stock levels, ensuring adequate supplies are available for daily operations.
5. Collaborate with the kitchen team to plan and develop new Rajasthani dishes, keeping up with evolving culinary trends.
6. Train and mentor junior kitchen staff on Tandoori cooking techniques, Rajasthani cuisine, and the proper use of spices.
7. Adhere to food safety and sanitation standards, following proper hygiene practices to ensure a safe working environment.
8. Maintain accurate records of food inventory, wastage, and any necessary requisitions.
9. Assist in maintaining high standards of food presentation and portion control to meet customer expectations.
10. Stay updated with industry trends, new ingredients, and cooking techniques related to Tandoori and Rajasthani cuisine.


1. Minimum of one year of experience working as a Tandoori Chef, with a focus on Rajasthani cuisine.
2. Extensive knowledge of Tandoori cooking techniques and North Indian cuisine, including expertise in preparing Rajasthani dishes.
3. Familiarity with a wide variety of Rajasthani spices and their appropriate usage in different dishes.
4. Strong understanding of food safety and sanitation guidelines.
5. Excellent organizational and time management skills to handle multiple tasks efficiently.
6. Ability to work effectively in a fast-paced kitchen environment while maintaining attention to detail.
7. Strong teamwork and communication skills to collaborate with the kitchen staff and provide guidance when needed.
8. Flexibility to work evenings, weekends, and holidays, as required in the restaurant industry.
9. A passion for delivering exceptional culinary experiences and a genuine love for Rajasthani cuisine.
